I’ve worked in 5 kitchens so far in my life and the people that I’ve met have taught me a lot. Some of these experiences have been great, and others have been quite scary, nevertheless, they’ve all been enriching in some way…anyway thats for another time. I’m now working at a great restaurant in Paris with a focus on fish.
I went in at 7 a.m. to work one day to catch our fish guy. The guys I work with knew I wanted to photograph this so as soon as the van pulled up, they called my name and we sprinted out the door. I took this photo as they were transferring the fish into ice trays (all of this must have taken less than 10 minutes.) Fish deliveries usually happens twice a week, but the big order comes in on Tuesdays because most restaurants are closed Sundays and Mondays. Our fish guy makes his picks at a port on the west coast of France and delivers his fresh picks to some of the best restaurants in Paris. We’re lucky to be one of them.
Anyway, just a little update from me. I haven’t had much time to write because of restaurant hours.
