Fool Proof Banana Pancakes

One of the things I look forward to when I’m home is cooking breakfast for my sister. My parents are happy with a plate of fresh fruits but my sister won’t be satisfied without a hefty start to her day, so I spoil her a little every time I’m back. Today I made banana pancakes, this recipe is easy and requires common household ingredients so they’re easy to whip up any day! Soft, fluffy and delicious, these pancakes are perfect for the most important meal of the day. Remember, they’re fool proof so give this recipe a try!

Banana Pancakes

  • 2 tablespoons white vinegar or lemon juice
  • 3/4 cup milk
  • 1 cup all-purpose flour
  • 2 tablespoons white sugar
  • 1teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg
  • 2 tablespoons melted butter (and more for greasing pan)
  • 2 ripe bananas diced (and more for serving)
  1. In a small bowl mix milk with white vinegar or lemon juice and let sour for 5 minutes.
  2. Combine dry ingredients in a large mixing bowl.
  3. Whisk egg and butter into “soured” milk and add bananas to the mixture.
  4. Pour the flour mixture into the wet ingredients and whisk until lumps are gone.
  5. Heat a skillet over medium heat and coat with butter.
  6. Pour batter onto the skillet until covers bottom of pan and cook until bubbles appear on the surface.
  7. Flip with a spatula, and cook until golden on the other side.
